In the small town of Enosburg Falls, Vermont, building is approved for a cheese plant that would become one of the largest producers of cream cheese in America over the next 125 years.
With more cows than people, Enosburg Falls, VT has been called the Dairy Center of the World. This small town emerged on the national scene with premium dairy products everyone could enjoy in the early 1900s and has remained a major dairy producer to this day.
With the dawn of the frozen rail car, Vermont Dairy Products were making their way to New York City. It's at this time that the New York City Cheesecake began to gain mainstream appeal.
