His parents are Henri and Yvonne Keller, and they had a patisserie, called Patisserie Keller, where he helped with baking. By 16, Keller knew he wanted to do it professionally and attended Ecole Hoteliere in Strasbourg. In 1982, Keller was sent by Vergé to open the now-defunct Sutter 500 restaurant in San Francisco. By 1986, he had established himself as co-owner and executive chef of Fleur de Lys in San Francisco. Later, he opened a gourmet burger bar in Las Vegas that serves a $60 Rossini Burger. This burger is made from American Kobe beef, shaved truffles, and sauteed foie gras. Connoisseurs claim this burger tastes heavenly, and Keller then opened a second Fleur de Lys in Mandalay Bay in Las Vegas. He also owns SLeeK, a French-influenced steakhouse in St. Louis. In 1996, Keller published his first book, “The Cuisine of Hubert Keller.” The following year, he won the prestigious James Beard Foundation/Perrier Jouët award for being America’s best chef in California. In 1996, Fleur de Lys was awarded a Michelin star. Keller then authored his second book, “Burger Bar: Build Your Own Ultimate Burgers,” in 2009, and in 2012, he published his third book, “Hubert Keller: Souvenirs.”
