It’s a soup of dried small pieces of bread stewed in almond broth and garnished with coxcombs, truffles, and anything else that elevates the flavor.

The cream puff we eat today does not date quite as far back. The modern cream puff found its first reference only in the 19th century. Very soon after its current form emerged, cream puffs became a hot favorite in the New World. Restaurants in the United States have been selling cream puffs since 1851.
