Internationally acclaimed Chef Gabriela Cámara, founder of the iconic Mexico City restaurant Contramar, will debut Cantina Contramar on the Las Vegas Strip at the 2025 MICHELIN One-Key resort, Fontainebleau Las Vegas, on March 28, 2026. The new restaurant brings together three of Mexico's most influential creative voices - Chef Cámara, architect Frida Escobedo, and tequila expert Bertha González Nieves - to blend Mexican cuisine, beverage, and design.

Why it matters

The opening of Cantina Contramar at Fontainebleau Las Vegas further elevates the Strip's culinary and cultural landscape, introducing Chef Cámara's signature hospitality and the iconic 27-year Contramar brand to Las Vegas. The collaboration with Escobedo and González Nieves also marks the first restaurant project in the U.S. for the renowned architect.

The details

Cantina Contramar will weave in Chef Cámara's iconic seafood dining with new creations that are a twist on Mexican cantina classics. The menu will be complemented by custom cocktails and small-batch sipping tequilas from Casa Dragones. Escobedo's design of the restaurant is inspired by traditional Mexican cantinas, featuring an open kitchen, comal station, and bar as focal points.
