New research from BITE: Building Impact Through Eaters and Datassential explores the growing gap between eater demand for sustainable dining options and the foodservice industry's adoption of climate-smart practices. The study, based on surveys of 1,506 U.S. consumers and 400 foodservice operators, finds that while consumers, especially Gen Z and Millennials, are increasingly seeking plant-forward meals, sustainably sourced ingredients, and new food experiences, operators are struggling to adapt their menus, pricing, and staff training to meet this evolving demand.
