Grinnell College's Dining Services has implemented several operational changes, including incorporating AI-powered scales to track food waste, transitioning to digital menu boards and price tags, and launching a new mobile app called Nutrislice to display nutritional information. The department is also adjusting self-serve options based on student feedback, with a hybrid model for the egg station.
Why it matters
These changes are intended to help Dining Services better understand student preferences, reduce food waste, and provide more transparency around menu items and nutritional information - especially for the college's diverse international student population.
The details
The new AI-powered scales allow staff to more accurately measure ingredients and track food waste, which Dining Services plans to use to adjust menu offerings. The digital menu boards and price tags replace thousands of printed materials annually. The Nutrislice app provides nutritional details in over 50 languages. In response to student feedback, Dining Services is switching the egg station to a hybrid model of made-to-order and self-serve options.
- The operational changes were implemented at the start of the Spring 2026 semester.
- The new Nutrislice app and digital menu boards went live in February 2026.

Scott Turley
The interim director of dining services at Grinnell College.
What they’re saying
“The intent behind that is that they're weighing everything they're producing. They can also weigh the waste at the end of the day that students leave behind, and they use that as a metric to get [data]—What do students like? What are they wasting most? What should we probably not make that much of anymore?”

“There's hubs at all these locations so when we need to update those signs we just send it, and it actually just updates those screens and then you know it's all accurate.”
— Scott Turley, Interim director of dining services (thesandb.com)
“We started talking with the students who were in line and some shared with us that they don't come if they're cooking their own [eggs] because it's intimidating.”

What’s next
Dining Services plans to monitor student interest in the new fresh fruit offerings, including grapefruit, clementines, kiwis, and dragon fruit, to determine if they will be served more frequently in the future.
The takeaway
Grinnell Dining Services is proactively addressing student feedback and leveraging new technologies to reduce food waste, improve menu transparency, and better cater to the diverse dietary needs and preferences of the college's student population.
