A miso making workshop in Atlanta will teach participants the basics of fermenting soybeans into the traditional Japanese seasoning, including non-soy variations. Led by fermentation expert Cheryl Paswater, the class will cover the science behind miso, its nutritional value, and how to make different miso recipes at home.

The details
The two-hour workshop will cover the fundamentals of miso production, including the role of the Aspergillus oryzae fungus in the fermentation process. Participants will learn how to make traditional soy-based miso as well as alternative recipes using different beans or grains. They will also get to sample miso-seasoned snacks during the class.
- The miso making workshop will take place on Saturday, March 28, 2026 from 2-4 p.m.
