Jacob Sabo is opening the first brick-and-mortar location of his Flower Shop Beer Werks brewery at 3501 Delgany St. in Denver's RiNo neighborhood, taking over the former space of Mockery Brewing and Shambles Tavern. Sabo plans to offer a range of beers, from flagship styles like a Nordic ale and lavender cream ale to more experimental brews like a strawberry habanero hazy and a cedar wood-infused IPA. The brewery will also serve hop waters, seltzers, ciders, and non-alcoholic offerings, with food provided by Heritage Flame Barbecue. Sabo expects about 75% of Flower Shop's 2,000-barrel annual production to go out for distribution, aiming to get beer to drinkers rather than relying solely on taproom sales.

Why it matters

The opening of Flower Shop Beer Werks in the former Mockery Brewing space represents the continued evolution of Denver's RiNo neighborhood as a hub for craft beer, food, and creative businesses. The brewery's focus on approachable yet unique beers, as well as its plans for contract brewing and distribution, reflect broader industry trends of breweries diversifying their business models to remain competitive.

The details

Sabo is opening Flower Shop Beer Werks in the 900-square-foot space that previously housed Mockery Brewing and Shambles Tavern. He plans to fill the space with hanging gardens and plants, creating a 'greenhouse you can grab a beer in' vibe. The brewery will offer beers in the $5-$6 per pint range, as well as $3-$4 shots and $5 wine pours. Sabo's 'flagship' beers will include a Nordic ale, lavender cream ale, and porter, alongside more experimental offerings like a strawberry habanero hazy and a cedar wood-infused IPA. The brewery will also serve hop waters, seltzers, ciders, and non-alcoholic options. Food on-site will be provided by Heritage Flame Barbecue, run by the Hispanic Restaurant Association.

  • Flower Shop Beer Werks will open in the coming months.
  • Mockery Brewing closed in 2023, and Shambles Tavern closed at the end of 2022.
