A new Hong Kong-inspired pizzeria called Metro Pie Pizza is set to open on February 20 in Lakewood, Colorado. The restaurant is owned by the Choi family, who also plan to launch a Hong Kong-style night market on the property this summer. Metro Pie Pizza will serve full pies for a flat price with a build-your-own model, as well as signature pies and rotating specialty pizzas inspired by Asian flavors.

Why it matters

The opening of Metro Pie Pizza and the planned Hong Kong-style night market represent an effort to bring a unique cultural experience to the Denver metro area, blending traditional Hong Kong influences with a modern fast-casual pizza concept. This could help diversify the local dining scene and attract new visitors to the Lakewood community.

The details

Metro Pie Pizza is located at the corner of Wadsworth Boulevard and West Ninth Avenue in Lakewood. The restaurant will be part of a larger development called Red Line Station, which also includes a coffee shop called Red Bus Coffee owned by Alice Choi, the daughter of Metro Pie Pizza's owners Ricky and Anna Choi. The Choi family hopes to create 'a community hub where people are encouraged to gather, spend time and connect' with the new businesses.
