Good Pressure Brewing in Allied Gardens was founded by a married couple, Erik and Shannon Fowler, who drew on their backgrounds in marketing, customer service, and the local brewing industry to create a taproom designed to meet the needs of a diverse clientele. Koobrew in Miramar is the project of Koo Miyake, a brewer-partner who is using his wide-ranging beverage-making skills to produce not just traditional beers, but also 'functional spritzers' made with wine yeast, botanicals, fruits, herbs, and spices. Lyons Peak Brewing in Jamul is the passion project of homebrewer Chad Stevens, who is focused on producing a single, labor-intensive Belgian-style kriek made with rare Schaerbeek cherries that he grows on his own property.
